A great canal tour right outside Amsterdam Centraa. They have open as well as closed boat tours, and our skipper Bart was an entertaining guy. They cover the canals all the way to Waterlooplein and Rembrandthuis and back, with entertaining commentary on local culture, history of the city and showing us some of the major bridges and waterways. While you don't cover the major sights of the city (which you would on walking tours or the hop on hop off bus tours), it's a great way to experience Amsterdam. Would highly recommend the 1.5 hour lovers canal cruise.
