Mexico City was built directly on top of Tenochtitlan, stone by stone, the same way today's Mexican food was built on top of a 9,000-year-old corn tradition. This tour traces both layers at once, six stops through the historic center tasting how Indigenous, Spanish, and Lebanese influences all ended up on the same plate.

Begin at a tiny, family-run eatery tucked off a side street, the kind of place with a handwritten menu and one or two women running the whole kitchen. Taste a wedding mole, a recipe combining two family traditions, made fresh every Monday in a giant clay pot, stirred entirely by hand.
Walk into a market that's operated on this exact spot since before the Spanish arrived, first as an Indigenous open-air market, later rebuilt as vendor housing in 1933 that simply never left.
